Pacific Coast Spirits distills in Oceanside, California, and this gin leans on the citrus growing around it rather than on a heavy juniper spine. Fresh peel does most of the aromatic work, so the nose arrives bright with lemon, orange and a lift of grapefruit before the juniper and coriander settle in underneath. The palate is soft and rounded, with candied peel, a little pine and a gentle pepper note through the middle, and the finish is clean and short. This is a contemporary style rather than a London dry, so it plays better with light mixers than with heavy ones. Use it in a Tom Collins, or a gin and tonic with a grapefruit wedge.
