Paladar Reposado Barolo Casks 750ml

Paladar Reposado is finished in casks that previously held Barolo, the Nebbiolo-based red from Piedmont, and that choice of wood pulls the tequila somewhere unusual. Nebbiolo casks bring dried rose, tar and red fruit rather than the vanilla and char you get from bourbon barrels, so the agave stays visible instead of being buried under sweetness. The nose runs cooked agave, cherry and dried herb; the palate shows red fruit, black pepper and a faint tannic grip through the middle; the finish is dry and savoury. Sip it neat at room temperature in a copita, or build it into a tequila negroni where the vermouth meets it halfway.
