This Paladar Reposado spends its rest in casks that once held Sauternes, the botrytised sweet white from Bordeaux, and the wood does exactly what you would expect it to. Sauternes barrels carry honey and stone fruit rather than the vanilla and char of ex-bourbon wood, so the tequila lands rounder and sweeter than most reposados without losing the agave. The nose gives apricot, honeycomb and cooked agave; the palate is soft and slightly viscous, with candied citrus, marzipan and a peppery agave edge underneath; the finish is warm and gently sweet. Serve it neat after dinner, or stir it into an old fashioned with orange bitters.
