Penelope Havana Cooper Series is a straight bourbon whiskey from Penelope Bourbon, double-finished in Caribbean rum casks and 100% farm-sourced maple syrup barrels. The two-stage finish shows: twelve months in rum casks bring molasses and tropical sweetness, then a final month in maple barrels rounds the edges with warm, woodsy sugar. Built on a 74% corn mash bill with rye, wheat, and malted barley rounding it out, it drinks richer and sweeter than Penelope's standard release, bottled at 93 proof. Limited to 4,500 cases, part of the Cooper Series line built around barrel experimentation. Pour it neat to catch the rum-and-maple layering, or over one large cube to slow it down.
