Penelope Tokaji Cask Finish is an eight-year-old straight rye whiskey given a second maturation in casks that once held Tokaji, the sweet wine of northeastern Hungary. Eight years puts real oak on the rye before the finish ever begins, so the wine cask works as seasoning rather than a disguise. The nose is dried apricot, honey and a snap of green herb, the palate carries orange marmalade, clove, dark toffee and the rye's own pepper, and the finish is long, sweet at the edges and dry through the centre. Pour it neat, or let it carry a Manhattan built with a rich Italian vermouth.
