Pinhook 7 Year is a straight bourbon from the Kentucky outfit that names its releases after thoroughbreds and bottles each batch at whatever proof the blend calls for, rather than cutting everything down to one house number. Seven years in new charred oak is enough to pull real colour and structure out of the wood without sanding away the grain underneath it. The nose opens on caramel, orange peel and toasted oak, the palate brings baking spice, dark cherry and a peppery warmth through the middle, and the finish is dry and long with vanilla and char. Pour it neat first to see where this batch landed, then build an old fashioned with the rest.
