Green Chartreuse is the herbal liqueur made by Carthusian monks from a recipe of 130 plants that has been in the order's hands since the eighteenth century, and it remains the only major liqueur whose natural green colour comes entirely from those botanicals. At 110 proof it is closer to a spirit than a cordial. The nose is pine, mint, anise and wet meadow herbs, the palate swings from honeyed sweetness into thyme, hyssop and menthol bitterness, and the finish is very long, warming and peppery. Production is deliberately limited, so bottles come and go. Sip it chilled, or build a Last Word or Bijou.
