Rabbit Hole's Founder's Collection Amburana is a twelve-year-old straight bourbon finished in amburana, a Brazilian hardwood far more familiar to cachaça than to whiskey. Amburana is aggressively aromatic, carrying natural cinnamon and clove compounds, so even a short stay in it reshapes the spirit. Twelve years of American oak underneath supplies the caramel and dark fruit, while the finishing wood layers cinnamon bark, vanilla bean and a faintly medicinal spice across the top. The palate is thick and sweet, the finish long and warm. This one rewards a neat pour and some patience in the glass, though it holds up over one large cube.
