Raicilla El Acabo 750ml

Raicilla El Acabo is an unaged agave spirit from Jalisco, made in the raicilla tradition of small-scale stills, mountain-grown agave and methods that predate the tequila industry that grew up alongside them. Raicilla tends to be more feral than tequila and less smoky than most mezcal, with a green, mineral streak running the length of it. Expect cooked agave, wet stone and citrus on the nose, a palate of herbs, white pepper and a faint funk, and a dry finish that stays vegetal rather than turning sweet. Drink it neat in a copita or clay cup, in small sips, with a slice of orange alongside.
