Ransom Old Tom Gin is a barrel-aged Old Tom style gin from Ransom Spirits in Oregon's Willamette Valley, made by pot-distilling a base of malted barley and rye — closer to a grain whiskey than the neutral spirit most gin starts from — then resting it in used whiskey barrels. That process revives the pre-Prohibition Old Tom style, a slightly sweeter, maltier link between genever and modern London Dry gin. Expect juniper alongside malt and light oak on the nose, a rounder, slightly sweet palate, and a warm, spiced finish unlike a crisp, dry gin.

How to drink Ransom Old Tom Gin

Excellent in a Martinez or a Tom Collins, where its malty, barrel-aged character reads closer to whiskey cocktails than a standard gin drink.
