Rebecca Creek French Oak is a Texas whiskey given time in French oak, a tighter-grained wood than the American oak most whiskey sees. French oak tends to give up finer tannin and more spice than vanilla, which pulls the spirit in a drier, more structured direction than a standard bourbon barrel would. Expect toasted nuts and warm spice on the nose, a palate of caramel, clove, dark chocolate and dried fruit, and a dry, tannic finish that sits on the wood. San Antonio's heat does the rest, working the spirit hard into the barrel. Drink it neat, or over a single large cube after dinner.
