George Dickel 15 Year Single Barrel is a Tennessee whisky drawn from one cask at Cascade Hollow in Tullahoma, where the new make is chilled before it passes through sugar maple charcoal. That is the Lincoln County Process done cold, and it is Dickel's signature. Fifteen years in a hillside warehouse gives the whisky considerable oak without stripping the grain out of it. The nose is toasted corn, dark caramel and pipe tobacco; the palate brings brown sugar, cinnamon, cocoa and a mineral streak; the finish is long, dry and softly smoky. Single-barrel bottlings vary by cask. Drink it neat, and give it ten minutes in the glass.
