Six years is enough time for the barrel to do real work without flattening the grain underneath it. Straight bourbon is a protected term as well: new charred oak, no additives, no colouring, so what reaches the glass came from corn, wood and time alone. Expect a nose of caramel, vanilla and toasted corn; a palate of brown sugar, cinnamon, baked apple and a light rye snap; and a medium finish of dry oak and pepper. Pour it neat, or over one large cube for an easy weeknight bourbon.
