Rhum J.M Atelier Épices Créoles is a Martinique rhum agricole made from fresh-pressed cane juice, the appellation style that keeps the grassy, vegetal signature of the raw plant rather than the heavier tones of molasses rum. This release is built around spice: clove, cinnamon and cracked black pepper on the nose, a palate of cane syrup, candied ginger and dried orange peel, and a warm peppery finish that lasts longer than the sweetness does. Pour it neat at room temperature to let the spice unfold, or use it in a Ti Punch or a rum old fashioned where those notes can carry the whole drink.
