Ron Izalco 15 Year Cask Strength is an El Salvadoran rum bottled without dilution, so what left the barrel is what reaches the glass. Fifteen years of tropical ageing does the heavy lifting here: warm, humid warehouses accelerate the barrel's work, and full strength keeps the resulting weight and oil intact rather than thinning them with water. The nose is molasses, dark chocolate and dried fruit; the palate is thick and warm, with brown sugar, toasted oak, tobacco and baked banana; the finish is long and spicy. Pour it neat and add water a few drops at a time until the rum opens up.
