Roots Mastic Vintage Strength Chios Mastic 700ml

Roots Mastic is a Greek mastiha liqueur built on the resin of the mastic tree, a crop that grows commercially only on the island of Chios. Mastiha is made by steeping that crystallised resin in spirit, and this Vintage Strength bottling runs drier and more concentrated than the sweet supermarket style the category is usually known for. The nose is pine sap and cedar with a lift of white flowers. The palate is resinous and cooling, somewhere between fennel, cucumber skin and soft pine, with only light sweetness underneath. It finishes clean and faintly mentholated. Serve it very cold in a small glass after dinner, or lengthen it with soda and a squeeze of lemon.
