RY3 Cask Strength Toasted Barrel Finish is a rye whiskey given a second maturation in toasted barrels and then bottled without cutting it down. Toasting rather than charring the wood caramelises its sugars more slowly, which tends to push a whiskey toward baked-goods sweetness instead of sharp char. Undiluted, it arrives with vanilla, toasted almond and dark cherry on the nose, then a palate of maple, rye spice and cocoa, and a long, warm finish. Drink it neat in a small pour, add a few drops of water to bring the fruit forward, or build a rye old fashioned sturdy enough to take real dilution.
