About this bottle
Salvadores Mezcal Artesanal Cirial is made from cirial, a variety of Agave karwinskii that grows tall and thin on a woody trunk and takes well over a decade to mature. Karwinskii agaves are prized in mezcal for the vegetal, almost savoury character they bring, quite unlike the sweeter espadin most drinkers start with. The nose is green herbs, wood smoke and damp earth. The palate is dry and savoury, with celery leaf, roasted agave, white pepper and a faint saline edge. The finish is long, mineral and lightly smoky. Serve it neat at room temperature in a copita, and give it a few minutes before the second sip.
