Salvadores Destilado con Hierba Santa is a mezcal given a final distillation with hierba santa, the broad aromatic leaf used across southern Mexican cooking. Distilling with the leaf rather than steeping it keeps the result clean, so the herb reads as perfume in the spirit instead of as an infusion sitting on the surface. The nose is anise, green leaf and wood smoke. The palate is herbal and cooling, with sarsaparilla, roasted agave, black pepper and a menthol edge running through the middle. The finish is dry, long and faintly medicinal in the way good mezcal often is. Serve it neat in a copita, or build the most interesting mezcal negroni on your shelf.
