Salvadores Destilado con Cafe y Cacao is a mezcal redistilled with coffee and cacao, two crops southern Mexico grows well and puts into almost everything. Because the aromatics are carried across in the still rather than steeped in afterwards, this stays a dry agave spirit with a mocha shadow instead of turning into a liqueur. The nose is roasted coffee bean, dark chocolate and smoke. The palate is bittersweet and dry, with espresso, cacao nib, roasted agave and a little cinnamon. The finish is long, toasty and clean. Serve it neat after dinner in place of a digestif, or stir it into a mezcal espresso martini.
