Kazuki Gin is Sheringham Distillery's Japanese-inspired gin, made on Vancouver Island, British Columbia and released in small numbered batches, this one Batch 1373 from 2021. The botanical bill leans east, with cherry blossom and green tea sitting alongside the juniper, which pulls the gin toward the floral and delicate end of the spectrum rather than the piney one. The nose is blossom, citrus and soft juniper; the palate is green tea, bright citrus and a whisper of spice; the finish is dry, clean and gently tannic. Serve it in a Japanese-style highball with plenty of ice and soda, or in a very cold martini.
