Silver Oak Alexander Valley Cabernet Sauvignon is the Sonoma County half of Silver Oak's two-wine lineup, and it is made the way the house has always made wine: aged in American oak rather than French, then held back in bottle until the winery decides it is ready to drink. That single choice shapes the wine as much as the fruit does. The nose is cassis, vanilla and coconut-tinged oak; the palate is plush and rounded, with black cherry, cedar and sweet spice riding over supple tannin; the finish is long and warm. Decant it an hour before dinner and pour it with a ribeye or slow-cooked short ribs.
