Single Cask Nation Caol Ila 2009 (Spanish sherry) 700ml

This is a Caol Ila single malt distilled in 2009 and bottled by Single Cask Nation, the independent bottler that buys individual casks and releases them without blending them away into something safer. Caol Ila sits on the north-east coast of Islay and makes a peated spirit that runs cleaner and more maritime than its southern neighbours; this cask spent its life in Spanish sherry wood. The nose is smoke, dried figs and brine; the palate layers sherried dark fruit and walnut over cool ash and lemon; the finish is long, smoky and faintly salty. Drink it neat, and give it ten minutes in the glass first.
