About this bottle
Sol2Noches Sotol Blanco is made from the desert spoon plant, a wild dasylirion that grows across northern Mexico and is harvested rather than farmed, which is why sotol tastes like the ground it came from instead of like tequila. The hearts are cooked, fermented and distilled unaged, so nothing stands between you and the plant: wet stone and green herbs on the nose, then a grassy, mineral palate with pine, white pepper and a thread of smoke from the roast. The finish is dry and earthy. Sip it neat at room temperature in a small glass, or use it where a mezcal would go in a paloma.
