Black Truffle Rye is Sonoma Distilling Company's strangest bottle and its most talked-about: the Sonoma County distillery takes its own rye, made on direct-fire copper pot stills, and infuses it with black truffle. The result sits closer to a savoury aperitif than to a flavoured whiskey in the usual sense. Earthy truffle rises first, then rye pepper and toasted oak underneath, and the palate runs mushroom and forest floor over caramel and baking spice before a long, dry, savoury finish. It divides a room, which is half the fun. Serve it neat in a small pour alongside cheese and charcuterie, or stir it into a very dry Manhattan.
