California Rye is Sonoma Distilling Company's home-state rye, distilled in Sonoma County on direct-fire copper pot stills, a method that heats the pot with flame rather than steam and leaves a faint toasted character behind. Rye brings the pepper the wheat and corn whiskeys lack: spice and orange peel on the nose over toasted grain, then black pepper, caramel and dark bread crust across a firm palate, finishing dry and spicy with a curl of smoke. It is a rye built for cocktails but sturdy enough to take neat. Stir it into a Manhattan or a Sazerac where the spice needs to survive the vermouth.
