Sonoma Distilling Company's Straight Rye is the aged, fully matured side of the distillery's rye programme, made in Sonoma County on direct-fire copper pot stills and rested in new charred oak long enough to earn the straight designation. Extra time in wood pushes the spice into darker territory: rye pepper and toasted oak on the nose over dark caramel, then black pepper, dried cherry and molasses on a palate with real weight, drying out through a long warming finish. It has the backbone a good rye needs and enough sweetness to sip. Take it neat first, then stir a Manhattan with a sweet vermouth that can keep up.
