Tau Cask Strength is a long-aged tequila bottled without the usual dilution down to 40 percent, which puts it in rare company in the agave world. Extended barrel time turns cooked agave into something dark and dessert-like, and the extra strength keeps that weight from collapsing into sugar. The nose gives dark caramel, dried fruit and toasted oak with a hint of tobacco, the palate is butterscotch, cocoa and baking spice with deep agave running underneath, and the finish is very long and warming. Treat it like a rare aged spirit rather than a mixer: neat in a copita, at room temperature, with a few drops of water if the heat rises.
