Teeling Single Grain is distilled from malted and unmalted barley at the Teeling Distillery in Dublin's Liberties district, then fully matured in a single fill of red wine casks — Cabernet Sauvignon barrels sourced from California, rather than the ex-bourbon or ex-rum casks used for most Irish whiskey. That wine-cask maturation is the whole personality of the bottle: dark berry fruit and light tannin over the classic single-grain base of vanilla and honey, with a soft, slightly fruity finish instead of the usual bourbon-barrel sweetness.
