Single pot still is Ireland's own whiskey style, distilled from a mash of malted and unmalted barley in copper pot stills, and it gives the creamy, peppery texture no other category quite copies. Teeling distils its pot still in Dublin and put this release into virgin Swedish oak, a slow-grown northern wood that pushes spice and resin rather than the sweet vanilla of American barrels. The nose is green apple, cracked pepper and fresh sawn oak, the palate is creamy pot still spice with vanilla, clove and a resinous edge, and the finish runs long and drying. Serve it neat and let the oak settle before adding any water.
