The 'Vinothèque' designation refers to library-aged Champagne, held back and given extra time on the lees before release beyond the standard requirement. It has a pale golden color with white flowers, citrus, and brioche on the nose, a full-bodied, creamy palate of ripe apple, honey, and toast, and a long, mineral-tinged finish. This is a Champagne built for pairing with a real meal rather than serving as a plain toast.
