De Nada Blanco is unaged blue agave tequila, bottled without time in wood so nothing stands between the drinker and the plant. Blanco is the format that shows a producer's hand most plainly: how the agave was cooked, how it was fermented, how it came off the still. Here that reads as fresh cooked agave, lime zest and a wet-stone note on the nose, then sweet agave, green pepper and a hint of salinity across the palate, closing crisp and short with a peppery snap. Chill it lightly and sip it neat, or pour it into a margarita where the agave still has to speak.
