Tequila Tau Añejo is blue agave tequila aged in oak for at least the year the añejo category requires, which gives it colour, a fuller texture and the caramel notes that make aged tequila such an easy step across from bourbon. The agave stays present as a savoury, earthy line underneath. Roasted agave, vanilla and baked pear on the nose; caramel, cinnamon and oak layered over cooked agave on the palate; a warm, rounded finish closing dry on wood. This is a sipping pour rather than a mixing one — neat in a small glass, or over a single large cube when the evening calls for it.
