Tau Blanco High Proof is unaged blue agave tequila bottled above the standard strength, and that decision changes the drink. Most tequila is cut down to a mid-forties percentage; bottling higher keeps more of the oils and aromatics that water strips out, so the agave arrives louder and the texture feels thicker. Intense cooked agave, citrus oil and green pepper on the nose; concentrated sweet agave with brine and cracked pepper on the palate; a long, hot, clean finish. Add a few drops of water and sip it neat, or use it in a margarita where it can stand up to lime and ice.
