Tequila Tau Reposado is blue agave tequila rested in oak for a stretch measured in months, which is what separates reposado from both the unaged blanco and the darker añejo. It is the compromise position of the category and often the most useful bottle on a shelf: enough wood to soften the spirit, not enough to bury the plant. Cooked agave, vanilla and orange blossom on the nose; honey, light oak and soft white pepper on the palate; a medium finish that stays gently sweet and finishes clean. Drink it over ice, or build an agave-forward old fashioned and skip the sugar cube.
