About this bottle
Viva México comes from the Vivanco family in Los Altos de Jalisco, and this bottling is made the slow way: the cooked agave is crushed under a tahona, the stone wheel that predates roller mills. Crushing that way keeps more plant fibre in contact with the juice, and the resulting tequila tends to taste heavier, earthier and more textural than a mill-pressed blanco. Cooked agave, wet stone and citrus blossom on the nose; sweet fibrous agave, earth and white pepper on the palate; a long, mineral, dry finish. Drink it neat in a copita — this is a blanco built to be tasted rather than shaken.
