Salmiana is milled by tahona and distilled in copper, producing a mezcal known for an unusually herbaceous, almost minty profile: big mint-chip-ice-cream notes alongside watermelon and candy-like sweetness, with plum, apricot, grapefruit, jalapeño and grilled cheddar layered through the palate.
