Bushmills The Rare Casks No.2 is a 29-year-old single malt Irish whiskey, the second numbered release in the Old Bushmills Distillery's rare-cask series. The spirit spent twelve years in bourbon barrels and Oloroso sherry casks, then seventeen more finishing in Pedro Ximénez sherry casks — the sweet Spanish dessert-wine wood that gives this bottling its dark, dried-fruit weight. It is bottled at 51.6%. Roasted cashews, hazelnut and dried fruit lead the nose; the palate turns to sourdough, grapefruit, aged balsamic and orange marmalade, with cedar, vanilla bean and cocoa stretching the long finish. A one-time limited release, this is a slow after-dinner pour for drinkers who already know old sherried whiskey and want the rarest bottle on the shelf.
