Ardbeg 25 Year Old is an Islay single malt bottled at 46% from stock laid down when the distillery's future was anything but certain — Ardbeg was shuttered for much of the 1980s and 90s, which makes whisky of this age genuinely scarce rather than merely old. Twenty-five years does something specific to Ardbeg's peat: the smoke stops shouting and turns waxy and coastal. Soft smoke, sea spray, beeswax and dried tropical fruit on the nose; mellow peat with honey, lemon oil and old leather on the palate; a long finish where smoke fades into salt. Drink it neat, at room temperature, with time.
