Trujillo Blanco Carbon is an unaged blanco tequila, bottled clear and straight from the still without time in wood, so what you taste is the agave and the way the house handled it. Blanco is the most exposed expression in any tequila range, because there is no barrel to hide behind and every choice in cooking, fermentation and distillation lands directly in the glass. Expect cooked agave and citrus peel on the nose, a palate of green pepper, lime zest and a faintly saline mineral edge, and a clean finish with a little white pepper heat. Drink it neat in a copita, or build a straightforward margarita.
