Trujillo Blanco Crystal is a clear, unaged tequila, bottled without barrel time so the agave itself does the talking. Blanco is where a distillery's cooking and fermentation choices show up most plainly, since there is no oak to round off the edges or add sweetness that was never in the spirit. The nose leans bright, with cooked agave, lime and a touch of fresh herb. The palate follows with citrus, cracked pepper and a clean vegetal sweetness, and the finish is crisp and dry with a gentle warmth.
