Trujillo Blanco Manifesto 56 is an unaged blanco tequila, bottled clear and straight from the still with no time in wood at all. Blanco is the expression where a tequila house has nowhere to hide: the cooking of the agave, the fermentation and the point at which the cut is made all land directly in the glass, unsoftened. Expect roasted agave and citrus oil on the nose, a palate of green pepper, lime peel and a mineral, briny edge, and a dry finish with a lift of white pepper. Serve it neat and lightly cool in a copita, or in a margarita built short on sweetener so the agave stays in front.
