About this bottle
Trujillo Blanco Tahona is an unaged tequila made using the tahona, the volcanic stone wheel that crushes cooked agave slowly rather than shredding it through a mechanical roller mill. The method is slow and inefficient and it leaves more agave fibre in the fermentation, which tends to give a rounder, earthier and slightly sweeter spirit than a roller milled blanco. Expect cooked agave, wet stone and citrus on the nose, a full palate of sweet agave fibre, black pepper and green herbs, and a clean mineral finish. Drink this one neat in a copita, because the tahona character is the first thing to disappear once you start mixing.
