Two Stacks First Cut is the signature blend from a small Northern Irish house that buys and marries mature stock instead of running its own stills, bringing malt, grain and pot still whiskey together to a house recipe. Blending done well is a craft in its own right, and this bottle is clearly built for drinking rather than collecting. The nose is orchard fruit, vanilla and light honey, the palate is soft and creamy with pear, caramel and a nutty grain note, and the finish is short, clean and gently spiced. Pour it neat, over a cube, or into a highball with soda and a lemon twist.
