Uncle Nearest Cognac Cask is a Tennessee whiskey finished in casks that previously held cognac, a natural move for a house that has since put down roots in the Cognac region itself. The base whiskey is made in the Tennessee style, filtered through sugar maple charcoal before barreling, and the second cask lays a layer of grape-derived fruit over that softness. The nose leans dried apricot, raisin and vanilla. The palate follows with caramel, stone fruit and a little oak spice, and the finish is round, sweet and lingering. Pour it neat in a glencairn, or add a single cube to open it up.
