Virginia Distillery Co American Single Malt Cabernet Cask Select 700 ml

Virginia Distillery Company makes single malt whisky in the Blue Ridge foothills, working with malted barley and copper pot stills, and this release is finished in casks that previously held Cabernet Sauvignon. Wine casks push a malt toward red fruit and away from the vanilla-and-caramel register that bourbon barrels give, which is the whole point of the finish. The nose leans dark berry, cocoa and toasted oak. The palate follows with black cherry, malt sweetness and a little dried fruit, and the finish is warm and gently tannic. Pour it neat in a glencairn, add a drop of water, and give it air before judging.
