Viva Mexico Blanco Madera is a blanco tequila with a nod to wood in its name, though the base is the clear, unaged expression where cooked blue agave has nowhere to hide. Blanco is the truest read on a distillery's agave and fermentation, since there is no barrel character layered over the top of it. Expect a nose of roasted agave, citrus peel and black pepper, a palate of sweet cooked agave, green herbs and a mineral edge, and a clean, peppery finish that fades quickly. Sip it neat at room temperature in a copita, or build a margarita where the agave stays audible.
