Volando Blanco is an unaged tequila made from 100% blue Weber agave and bottled without time in wood, so nothing stands between the agave and the glass. Blanco is where a distillery's work shows plainly — the cook, the fermentation, the cut. The nose leads with cooked agave and citrus, the palate brings green pepper, lime zest and a touch of sweetness, and the finish is crisp with a peppery snap. It is a mixing tequila by temperament, though it takes a chill well on its own. Shake it into a margarita, lengthen it with grapefruit soda for a paloma, or simply sip it neat.
