White Lotus Makgeolli is a Korean rice brew — unfiltered, cloudy and lightly sparkling, made by fermenting steamed rice with nuruk, the traditional Korean starter culture. It is one of the oldest drinks on the peninsula and among the gentlest, sitting closer to a beer in strength than to soju. The nose is steamed rice, yogurt and a little melon; the palate is soft, tangy and faintly sweet with a fizzy prickle; the finish is short and clean. The sediment settles as the bottle stands, so turn it gently before opening. Serve it cold in a bowl or small cup, alongside fried pancakes or a spicy stew.
