Wignac Cidre Bio is a French organic cider from the Ardennes, made by a producer that works with wild and hedgerow apples rather than commodity orchard fruit, then ferments the juice slowly and bottles it lightly sparkling. Cider made this way tastes more like the fruit and less like sugar, which is the whole argument for it. The nose is fresh-pressed apple, orchard blossom and a hint of hay; the palate is dry and gently tannic, with green apple, citrus and a fine mousse; the finish is crisp, dry and clean. Serve it cold in a wide glass or a bowl, with a galette, roast pork or a hard cheese.
